I love pickled herring!  I&#8217;ll have to confess though, before today I didn&#8217;t understand what all the fuss was about &#8211; some crazy, historical Scandinavian fetish that was born out of need for food in the winter or something. Bull. It&#8217;s heavenly.  I reached this particular enlightenment at Prinsen (The Prince) here in Stockholm; they serve a mixed herring platter tapas style with 5 small dishes of herring in various sauces, and a few extra toppings for fun. Now I&#8217;m a huge sushi fan, and I&#8217;m particularly picky about my fish, but these flavours blew my mind.
